Macintosh cider fermented with wild yeasts and Dolgo crabapples. Aged on the crabapple pomace then finished in neutral oak for eight months. Bottle conditioned.

Brett Fermented Cider - Temporal Ales Collab

Estate grown cider apples fermented in-barrel with a Brettanomyces-forward yeast culture and second-use cherries from Temporal Ales in Vancouver. Bottle conditioned.

 

Theory and Practice

Pét Nat Cider - Boskoop & Newtown 

Eighteenth century heirloom apples Belle de Boskoop and Newtown Pippin, fermented with wild yeasts and bottled using the méthode ancestrale. Aged on lees for eight months before disgorging.


Once and Future

Perry co-fermented with Quince 

Bartlett and Anjou pears fermented with wild yeasts and quince fruit from Kaleidoscope Fruit Ranch in Summerland. Aged on the quince pomace and finished in neutral oak for eight months. Bottle conditioned.


First Estate (2018)

Wild-fermented estate-grown cider

The very first harvest of newly planted cider apples from our orchard on the farm. Naturally fermented with wild yeasts. Complex, wine-like bouquet. Pale straw colour belies a nuanced, full-bodied cider with lively acidity. Very dry.
