Wild-fermented apple cider aged on crushed raspberries. Blended with Porters Perfection and Michelin bittersweet apples. Berries on the nose, tart raspberry on the palate, mild astringency. Very dry.
The very first harvest of newly planted cider apples from our orchard on the farm. Naturally fermented with wild yeasts. Complex, wine-like bouquet. Pale straw colour belies a nuanced, full-bodied cider with lively acidity. Very dry.
TRUE AT FIRST LIGHT
Single varietal Spartan natural cider. Wild fermented using the traditional French Keeve method. Aged for seven months. Notes of ripe tropical fruit and fresh-picked apples. Some natural residual sweetness and Medium bodied.
HUE & CRY
Single varietal cider made from organically grown Hyslop crab apples picked at our friend Anne’s orchard. Fermented and aged for eight months. Rich amber colour. Full-bodied with notes of vanilla and ripe fruit. Balanced acidity, dry finish.
Single varietal Porters Perfection, an English bittersharp known for producing oddly-shaped apples. Naturally fermented with wild yeasts, aged on lees for six months. Bright acidity and structured tannin.
